Organic Red Wine Cabernet Sauvignon - Korenika & Moškon - Istra, Slovenia

Vinification: Maceration 28 days on skins. Fermentation: indigenous yeasts, malolactic fermentation with indigenous bacteria. Maturation: 33 months in stainless steel tank, 10 years in oak barrels, 6 months in bottle. The wine is unfiltered.  

Characteristics: The wine is a deep garnet color. The bouquet is ripe and offers notes of overripe, dried fruit and the scent of the earth. It is somewhat reminiscent of the slightly oxidative notes peculiar to port. Not completely dry, bold, warm, even hot wine. It has an abundance of structure and extremely intense taste. 

Food pairings: Venison. Also good by itself. To serve at 16 - 18 °C.
