White Wine Zelen Sveti Martin – Vipava, Slovenia

Vinification: Hand-harvested in September. After a few hours of maceration, the must is gently pressed and fermented on fine lees in stainless steel containers. The wine then matures for 4 months in oak barrels, preserving freshness while adding subtle roundness and depth.

Characteristics: Bright straw-yellow color with greenish hues. The bouquet is aromatic and expressive, showing notes of Mediterranean herbs, citrus peel, and green apple, intertwined with hints of white flowers. On the palate, it is fresh and elegant, with lively acidity and a light, silky texture. Medium-bodied and well-balanced, with a pleasant, slightly herbal finish that reflects the indigenous Zelen grape’s unique charm.

Food pairings: Fresh salads, grilled vegetables, shellfish, or white fish. Excellent as an aperitif. Serving temperature: 10 – 12° C.
